I am officially in love with this dish! I had two beautiful fillets of salmon and this simple, easy recipe did it so much justice. This is another fabulous week night dinner idea, chock full of healthy protein (salmon), green veggies and healthy fat (coconut milk). From start to finish this only took me 20 minutes.
Ingredients:
500 g fresh salmon, cut into chunks
1 x 400ml can of coconut milk
2 cups each of snowpeas and celery
1tsp cumin powder*
1 tsp coriander powder*
2 leeks, chopped into small pieces for garnish
*If you don’t have cumin or coriander feel free to substitute any spices or herbs you may have in the cupboard. A bit of chilli / cayenne pepper would not go amiss, or even curry powder.
Make It!
Pour coconut milk into pan and heat on medium setting until it starts bubbling. Add salmon and move to low-medium heat. Drizzle cumin and coriander powder on top. Cover for approx. 8-10 minutes until salmon is soft and cooked on the inside. Take salmon chunks out and transfer to a plate. Add vegetables and leave covered for another 5 minutes until soft. Add salmon chunks back in and stir through to combine. Add leeks on top for garnish. Serve with basmati rice or brown rice.

Yes this definitely keep until the next day as long as you refrigerate it. I wouldn’t keep cooked fish for more than a day or two though… hard to do so when it’s so good! Let me know how you go with this dish!
