Do you know anyone who doesn’t like pizza? I don’t. Here’s my version of a really quick and easy pizza you can make at home without slaving over pizza dough, or purchasing unhealthy versions of ready-made pizza dough / frozen pizzas. And best of all, for those who don’t have ovens or can’t tolerate the thought of a hot oven in summer, this can be made on a humble fry pan! Try your favourite mix of veggies as almost any combination works! Tonight’s mix is not a conventional “pizza” topping as I was trying to use up veggies from last week, but it tasted fantastic anyway. Bonus: very kid-friendly.
Ingredients (Makes 1 small size pizza for 1 adult, or enough for 2 smaller kids):
1 Gluten Free wrap (or whole wheat / sprouted grain wrap)
1 clove garlic, crushed and minced
1 Tbsp chopped onion
1 medium carrot, grated
1 medium sized tomato, cut into small chunks
2 handfuls spinach
1 Tbsp chopped parsley
Optional: Cajun / Mexican spice (usually a mix of paprika, cumin, garlic, pepper, thyme and other spices). Paprika and / or cumin would do.
grated cheese for sprinkling (organic, grass fed if possible)
Extra Virgin Olive Oil
Make it!
Heat some olive oil in low heat. (Olive oil is optimal for low heat cooking as it has a low smoke point.) Saute garlic and onion until soft. Add tomato and carrot. Once carrot is soft, add spinach and cook only until spinach is slightly wilted. Sprinkle available seasoning. Or salt and pepper will do if you really don’t have any spices in the cupboard. This part of the recipe should not take more than 5-6 minutes.
Empty the pan and wipe with a paper towel. Return the pan to heat, this time on medium setting. Add wrap. Add vegetable mixture on top of the wrap and spread evenly. Sprinkle cheese. I used approx. 2 Tbsp of cheese for this attempt. Cover and leave for 5-8 minutes (you will start to hear the cheese make popping sounds as it melts and hits the hot pan). Then you’re done!
Veggie options: Try mushrooms, tomato and spinach for a more traditional mix. Leftover sweet potato, coupled with greens and mushrooms, can add another dimension. Try basil instead of parsley on top. Add roast chicken or smoked salmon if you wish. Basically almost anything works as cheese makes it easy to forgive vegetable combination “sins”.
