Welcome to the 3rd out of 3 recipes in this mini Lunchbox Series — healthifying your lunchbox prior to the frantic Christmas rush! Our first two recipes were savoury slices which could serve as “mains” for your lunchbox, or even as light dinners:

Of course the lunchbox series isn’t complete without a small sweet something that can be either a dessert or morning tea / afternoon tea item. Today’s recipe is a fantastic snack, providing that hit of sweetness while keeping you nourished with protein, healthy fats and whole grain carbohydrates. Due to the protein and fat content, this doesn’t cause a sugar rush and resulting energy crash. Best of all, there’s no cooking required! 
Ingredients:
1 cup chunky peanut butter (try a brand which only has peanuts and salt as ingredients, such as Woolworth’s Macro Peanut Butter)
1.5 cup steel cut oats (I chose the Freedom Wheat-Free Oats brand from Woolworth’s)*
1/4 cup melted coconut oil
1/2 cup sultanas
Optional: 2 Tbsp pure maple syrup or raw honey
*If you are gluten intolerant, you can try this recipe if you tolerate oats well. You can also substitute coconut flakes for the steel cut oats.
Make It!
Blitz the oats in a food processor until fine. (Alternatively you can use oat flour here or coconut flour). Add the coconut oil and sultanas and mix all together. Spread the mix on top of a sheet of baking paper and fold baking paper over until completely covered. Flatten into a square shape with your fists. Refrigerate for 30 minutes and slice. Wrap individual squares in foil. All done! 
Tip: As with any raw sweets held together by natural oils, keep this in a cool lunchbox or fridge until time to consume. As my daughter’s lunchbox can be exposed to sun and the elements at school while she plays or chats, I store raw slices like this in the freezer and they get the chance to “defrost” in her lunchbox until morning tea time.
