Naia’s Easy Butter Cookies

Don’t we all love simple recipes? My pre-teen daughter Naia has been quite the budding little chef in the sweets department (she leaves the veggies to me for now) and has been working on a few of her concoctions at home. Today’s ultra-yummy cookie is even better than the packaged stuff! The list of only 4 ingredients is a bonus. All up, prep and baking take only half an hour or less.

Clean treats are so important, especially now that almost every single treat meant for kids (and adults!) has so many artificial ingredients, high amounts of refined sugar or corn syrup, lots of gluten – -and are therefore the formula for energy crashes, irritability and inflammation, among others.

Unlike popular belief, butter isn’t something to be scared off. Healthy fats such as clean, grass fed butter, are very nutritious and beneficial to the body. Check out my blog post here to read more about fat and why it’s good for you.

Tips: Baking “clean” does mean an investment in a few basic ingredients such as:
– a non-refined sweetener (e.g. maple syrup, coconut palm sugar, raw honey, stevia)
– a gluten-free flour mix or a number of gluten-free flours such as rice flour, potato flour, quinoa flour and buckwheat flour (so many varieties to choose from!)
– aluminum free baking powder

Ingredients:
125g butter (just over a quarter of a block), softened (I like the Westgold brand which can be found at Woolies as it comes from grass fed cows)
3-4 Tbsp coconut palm sugar*
1.5 cups quinoa flour
1/2 tsp baking powder (aluminum free)
Add up to 1/4 cup milk or water if mixture is too dry / crumbly

Make It!

Preheat over to 180°C.
Mix flour and baking powder in one bowl.
In another bowl, cream the butter and sugar together with a mixer until well-mixed (approx. 1-2 minutes).
Fold the butter / sugar mixture into the dry mixture to form a soft dough.
Form dough into small balls and flatten into cookie shapes onto a baking tray lined with baking paper. Bake for 15-20 mins (depending on the size of cookies you are making and the strength of the oven). Cookies will be golden brown, like in the pic.
